Scratch Made Green Bean Casserole with Crispy Shallot Toppin

Ingredients

For the Green Beans:

2 tbsp. olive oil

1 tbsp. butter

1 medium onion chopped

8 oz. mushrooms sliced

3 tbsp. all purpose flour

1 tsp. salt

½ tsp. ground black pepper

2 cups 2% milk

24 oz. green beans trimmed (fresh or thawed if using frozen)

For the Topping:

1 tbsp. olive oil

1 tbsp. butter

3 large shallots sliced

1/4 tsp. salt

1/2 cup panko breadcrumbs

1/4 cup parmesan cheese

Instructions

1. Preheat the oven to 350 degrees F.

2. Prepare the Green Beans. Add the olive oil and butter to a large skillet over medium-high heat until the butter melts. Add the onions and mushrooms and cook about 8 minutes, stirring occasionally.

3. Stir in the flour, salt, and pepper. Cook for 1 minute. Slowly whisk in the milk ½ a cup at a time. Bring to a boil to thicken. Turn off the heat. Stir in the green beans.

4. Pour the green bean mixture into a 7×11 inch (or 9×9 inch) baking dish that has been sprayed with cooking spray.

5. Prepare the topping. Add the oil and butter to a medium skillet and place over medium-high heat for 2 minutes. Add the shallots and salt. Cook for 6 minutes, stirring occasionally. Remove from the heat and let cool for 5 minutes. Add the breadcrumbs and parmesan to the shallots. Stir well.

6. Sprinkle the shallot/breadcrumb mixture evenly over the green beans. Bake for 35-40 minutes, until the topping is brown.
